Smoker Box: Why have I never tried one of these before?

We’ve had a propane grill for a while and, while it’s convenient to just turn a couple of knobs and get the fires going, it doesn’t really work well for smoking.  With this smoker box, it’s a heck of a lot easier.  I’ve bought (and gotten as presents) bags of wood chips for smoking.  I’ve got a tote container with bags of cherry, pecan, mesquite, and more.

To try out this new smoker box, I grabbed a bag of mesquite chips and went to the local grocery store for some chicken.  Using the smoker box is new to me, so there was some trial and error.  As the manual instructed, I didn’t soak the wood chips (you’re just getting steam and not smoke) and I placed it as close to the burner as possible, which was under the grill grate.  Unfortunately that lead to the wood chips igniting pretty quickly and that’s not something you want.

I ended up placing the smoker box on top of the grill grate, directly over a burner, and left the other two burners off.  This provides indirect heat to cook the chicken, as you can do normally on any grill, and heats up the smoker box enough to get those wood chips smoldering.  I did keep an eye on the smoker box, opening it up from time to time to see if I needed to add fresh wood chips.  Again, it was some trial and error.

In addition to the chicken, I cubed up some potatoes, skinned and chopped some carrots, and sprinkled on some salt and seasoning.  I put the veggies into a baking pan and put it on the grill, directly over the active burner and smoker box, using the higher grill grate on the lid.  The potatoes and carrots were soft and tasty by the time the chicken was done.

It didn’t take too long.  I frequently moved around the chicken so all the pieces got exposed to smoke and heat.  I checked the chicken with a meat thermometer to make sure it was done.  Once the chicken had cooked through, it was ready to cool a moment off the grill and serve.

The chicken was extremely good.  It was full of that tasty, mesquite flavor while still moist.  The potatoes and carrots went along with the meal and had also picked up that mesquite flavor.

The smoker box is now part of my grilling arsenal.  It’s always ready to add flavor to our grilled meals, either with a good, long smoke like the chicken we enjoyed, or some added flavor to the quicker meals like hamburgers.

The box’s construction is sturdy and the metal is thick.  It has held up well to the flames.  It’s the perfect size to sit above a burner and allow room for the food on the grill.  It’s a great item to give your grilling that extra touch.
