Easy and delicious bruschetta recipe

We were given a bunch of bread and I had a ton of tomatoes that were about to go bad, so I decided to make some bruschetta! It turned out sooooo good and even the kids ate it!
Mmmmmm... do you love bread as much as I do!? Anyway, this ended up not taking very long (although I should have timed it!) and it really did turn out REALLY good! I usually turn my extra tomatoes into salsa, but I'm so glad I tried something different with these!
Ingredients:
Ciabatta bread, sliced into 1" or smaller slices
Coconut oil or olive oil
A bunch of tomatoes, diced
Salt to taste
Garlic to taste (I love garlic so I used a lot)
Basil to taste (I used a TON!)
Mozzarella cheese (I used Babybel!)
optional marinara sauce for dipping
Alright, so start by putting a thin layer of coconut or olive oil on the bread and then toasting your slices for a few minutes until they're just starting to get brown.
While your bread is toasting, dice up those tomatoes! I like them pretty small, but as long as they're "bite sized," you'll be fine.
Using a paper towel, absorb as much of the moisture as you can (you can also cook it off, but it was like, 200 degrees outside already and I didn't want to heat the kitchen any further by using the stove).
Get your cheese out of the fridge so it's not cold when you're ready for it.
I used these spices, but also a little fresh basil, which I chopped very finely.
Apply spices to the tomatoes
I used a TON of basil.
Shoo the dogs away repeatedly...
Alright, back to seriousness. Take the toasted bread out and spoon some of the tomato/spice mixture onto each slice of bread.
Put back in for another round of toasting.
While the bread is toasting, cut up the cheese.
I used the same cutting board as I did for the tomatoes and the spices and then rolled the cheese in the leftover mixture on the cutting board.
Put a few pieces of cheese on each slice of bread.
Back into the toaster oven one last time for just a few minutes (to melt the cheese)
Top with more basil!

I think I ate 4 of these as my dinner when I made them.
I dipped them into a store-bought marinara sauce (SHOULD have made my own, but again, TOO HOT!) and they were amazing!
Don't they look delicious! And since I only used the toaster oven, the whole house didn't get too hot for the rest of the day.
Plus, I couldn't believe that the kids actually ate them! They enjoyed dunking them in the marinara sauce as well.
By the way, I froze about half of these and we ate them a few days later. We popped them in the air fryer until the cheese was sizzly and they were perfectly fine.
