Ten Things: Our 10 Favorite Vegetables

I'm running low on energy and inspiration today. Here are our 10 favorite vegetables as a family!

Our Favorite Vegetables

Carrots: We all love to snack on baby carrots right out of the bag. I also love shredded carrots in my salad. They also make a great addition to practically any soup.

Lettuce & Spinach: Salads galore! I also LOVE wilted spinach on just about anything, especially pizza! There's tons of different kinds of lettuce, and some of them have some REALLY good flavor, unlike that plain ol' iceberg stuff.

Squash: I couldn't decide between acorn and butternut squash. Our favorite way to make acorn squash is to bake it, then add some cut up apples, oats, a little butter, and a little brown sugar and bake it some more so that everything gets caramelized in the middle. MMMMM. As for butternut squash, I love making SOUP out of it.

Green Beans: My FAVORITE green beans were right out of my grandma's garden. The SMELL of them... oh, there's nothing like it. And of course, the taste was phenomenal. I LOVE making green beans with red potatoes.

Peas: While I could eat sugar snap peas right out of the bag all day, I do LOVE green peas in nearly everything, especially curries. Mmmmm.

Brussel Sprouts: YES, brussel sprouts! Bake them with a little butter and garlic and whatever other spices you want. They're SOOOOO good and SOOOOOO good for you!

Broccoli: Another controversial one here! Steamed broccoli has a bad rap, but I'll tell you, it's delicious. Just don't overcook it, or yuck!

Zucchini: zucchini is amazing. Just slice it and bake it with a little seasoning. Mmmmm.

Sweet Potatoes: baked sweet potatoes are amazing. They don't even need butter, but that's your call. I have an amazing recipe for sweet potato mash with carrots and orange juice concentrate. AMAZING.

Potatoes: FRIES! BAKED! CHIPS! Just don't mash them or Cocoa Puff won't eat them. Weirdo.

BONUS: When I asked the boys what their favorite vegetable is, one of them said CORN! That is fine; however, corn is really not a vegetable... it's a grain. But, I'll include it on the list! Corn is amazing. My favorite is to grill it on the barbeque so that it's slightly charred in some places and then eat it when it's BARELY cool enough to bite into.

What's your favorite vegetable and what's your favorite way to prepare it?

I don't like iceberg lettuce either! I grew up in a house where that was the only kind of lettuce...yuck! I do like leafy green lettuce like romaine. I ate zucchini at a Chinese/Mexican restaurant a few weeks ago. I don't know how they cooked it but it was delicious....with or without yum-yum sauce.
Lindsay @ Wineinger Farms - February 22, 2019 6:29 PM

I think mine is a toss-up between zucchini and spinach. Zucchini can be used in so many ways! Spinach, I love sauteed with my eggs and bacon in the morning. YUM!
Leanne - February 22, 2019 9:18 PM
Yum!! I love spinach and carrots - perfect complement to any savoury dish!
Indya | The Small Adventurer - February 22, 2019 9:25 PM
I loooove vegetables! Roasted is my favourite, but they also take the longest so we don't have them too often. I mostly love potatoes, beans and carrots, but I've recently discovered how nice zucchini is too
Darcey - February 22, 2019 9:56 PM
Some of our favorite vegetables are broccoli and carrots. I steam them, but you’re right about the broccoli, don’t over cook it. It’s great with a little bit of seasoning. My three-year-old surprisingly likes salads so we have those as well.
Madi Rowan - February 22, 2019 10:12 PM
So many good options...I love veggies but my favorite would have to be sweet potatoes! I love roasting them with a bit of coconut oil so they get a little caramelized...the best!

I can see a few vegetables on your list that can be on my 10 favorites as well. I do like spinach and zucchini, but I dislike broccoli. I love cauliflower, cucumbers and tomatoes (even if practically they are a fruit) too.

Zucchini is SO yummy! What's your favorite way to prepare it?
Mama Writes Reviews - March 4, 2019 11:09 AM
We like to include it in noodle dishes... we have one of those spiralizer things. I also like to make veggie chips with the dehydrator. Finally, we just slice them and put a little olive oil and garlic and onion powder (sometimes paprika and chili) and broil them until crispy.
Autumn - February 23, 2019 11:41 AM
I've been struggling with Brussels sprouts - I see them in the store and want to try to roast them, but I think I've gone thirty years thinking they're disgusting (the look I guess?) and have it stuck in my head that they'll be horrible. So many of my friends love them, so I need to suck it up and give them a fair chance!
Mama Writes Reviews - March 4, 2019 11:07 AM
YES! I hope you do. It took a GOOD recipe to get me over the hump of not liking them as well.
Joyce - February 23, 2019 3:20 PM
I love spinach it’s easy and quick to prepare. I also love kale
Jasmine Hewitt - February 23, 2019 5:25 PM
we don't eat all peas, because husband is allergic, but a lot of these veggies are staples in our house!
Mama Writes Reviews - March 4, 2019 11:05 AM
Oh no! Allergic to peas!? I'd have a hard time with that since I love them so much.
Christine - February 23, 2019 6:56 PM

Rosey - February 23, 2019 7:13 PM

I love brussel sprouts too! Those, broccoli and green beans are my favorite vegetables, but I love all types of salad too.
Amber - February 23, 2019 8:34 PM
Great choices! I personally do not consider potatoes or corn to be vegetables (too much starch) and my husband hates that! He would love off of them if I let him!
Mama Writes Reviews - March 4, 2019 11:04 AM
Yeah, potatoes are borderline vegetable for us too. I'm not as big of a fan of them as my oldest kid is (my youngest pretty much HATES potatoes unless they're french fries... *eye roll*
Blythe Alpern - February 23, 2019 9:01 PM
I love most veggies, except for green beans. I've hated them since birth. My favorite way to eat most veggies is roasted. It just brings out the flavor while still keeping the crunch.
Taylor @ Accomplished Family - February 23, 2019 9:23 PM
Honestly I'm so terrible. I love all these veggies but I never take time to make them with care! I love sweet potatoes.... I am so impatient I typically just microwave lol!
Mama Writes Reviews - March 4, 2019 11:03 AM
Actually, microwaving is a great way to prepare sweet potatoes. So much faster!
Season Bischoff - February 23, 2019 10:12 PM

Okay seriously my biggest shock in this entire post is that corn isn’t considered a vegetable?! I feel like the first 25 years of my life were a lie! Haha! But I love veggies. Zucchini’s are a fav of mine, too!
Mama Writes Reviews - March 4, 2019 11:02 AM
LOL! Yeah, I know! I was shook when I found out!
Alexandra Cook - February 23, 2019 11:29 PM
